Chinese Recipe: Eggplant Rice

Just a simple Chinese Rice Recipe with fried Eggplant. The five spice powder and the sauces give the rice a nice and aromatic taste. Its made very quickly and works great with other dishes.

Ingredients

  • 1 cup Rice freshly cooked (results in about 3 cups)
  • 2 cups Asian Eggplant diced
  • 1 tbsp Ginger chopped
  • 2-3 Cloves Garlic chopped
  • 1-2 red Chili chopped
  • 1-2 tbsp Scallions (white part)
  • 2 tbsp Scallions (green part)
  • 3 tbsp Coriander chopped
  • 1 tsp Cumin Seeds
  • 1/2 tsp Chinese Five-Spice Powder
  • 2 tbsp Chili Sauce
  • 1 tbsp white Vinegar
  • 2 tbsp Soy Sauce
  • 1/2 cup Broth
  • 2 tbsp Oil

Instruction

  1. Heat 2 tbsp Oil and fry the Cumin Seeds for 1 minute on medium heat
  2. Add Garlic, Ginger, Chili and white parts of the Scallions and fry for 1 more minute.
  3. Add the Eggplants and stir-fry for about 2 minutes
  4. Add 1/2 cup Broth and let it cook for about 4-5 minutes until the Eggplants are tender
  5. Add Chili Sauce, Five-Spice Powder, Vinegar and Soy Sauce and mix well
  6. Add the Rice and mix again
  7. Add Coriander and green parts of the Scallions, mix well and turn off the heat
