Hungarian Recipe: Gulyas

This is not really a authentic Hungarian goulash but tastes just as great. A delicious stew with Bell Pepper, Carrots and Kidney Beans. Also important for the dish is a good Hungarian sweet Paprika Powder. Serve with Bread or Noodles.

Ingredients

  • 1 cup Kidney Beans (soaked for 8 hours)
  • 1 Bell Pepper red cut
  • 1 Bell Pepper green cut
  • 1 cup Tomatoes chopped
  • 1 Carrot cut
  • 2 Onions chopped
  • 5 Cloves Garlic chopped
  • 1 tsp Caraway Seeds
  • 2 tbsp Hungarian sweet Paprika
  • 3 cups Water + 2 cups Water/Broth
  • 3 tbsp Oil
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instruction

  1. Boil the Beans in 3 cups of water covered for about 60 minutes.
    Do not drain the liquid
  2. Heat 3 tbsp Oil and fry the Onions for about 3-4 minutes on low heat
  3. Add the Garlic and fry for 1 more minute
  4. Add Tomatoes and fry for about 6 minutes
  5. Add Bell Peppers and Carrots, mix well and fry for 3 minutes
  6. Add Paprika and Caraway Seeds, mix well and fry again for 3 minutes
  7. Add Beans with the Liquid, 2 cups Water/Broth, Salt and Pepper, mix well and let it simmer for 40 minutes
