Indian Recipe: Bhindi Aloo Subzi

This is a very easy Indian subzi with fried Okra and Potatoes. Nice and Spicy. Can be eaten with some Roti or Paratha

  • 1 1/2 cups Okra sliced
  • 1 cup Potatoes diced
  • 1 Onion chopped
  • 2 Cloves Garlic chopped
  • 1 tsp Cumin Seeds
  • 1 tsp Amchoor (Mango Powder)
  • 1/4 tsp Turmeric
  • 3/4 tsp Chili Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Salt
  • 2 tbsp Oil


  1. Heat 2 tbsp Oil and fry the Cumin Seeds for about 3 minutes on low heat.
  2. Add Onions and fry for another 3 minutes.
  3. Add Garlic and fry for 1 to 2 minutes.
  4. Add Potatoes, mix well and fry for about 6 minutes on a medium flame.
  5. Add Okra, mix well and fry for about 5 minutes.
  6. Add Salt, Turmeric, Chili and Coriander powder, mix very well and fry for a few more minutes until the Potatoes are tender.
  7. At last add Amchoor, mix well and turn off the heat.
