Sri Lankan Recipe: Wambatu Moju

Wambatu Moju is a Sri Lankan fried Egggplant Pickle. Very delicious and best served with rice or as a side dish for a curry.

Ingredients

  • 2 cups Eggplant cut into strips
  • 1 small Tomato chopped
  • 1 tbsp Ginger chopped
  • 3 Cloves Garlic chopped
  • 2 Cloves
  • 1/4 tsp Turmeric
  • 1 tsp Coriander Powder
  • 3 red Onion sliced
  • 1/2 tsp Mustard Seeds (black)
  • 1 handful Curry Leaves
  • 2 tbsp Rice Vinegar
  • 1/2 tsp Sugar
  • 1/2 tsp Salt
  • Oil

Instruction

  1. Put the Tomato, Ginger, Garlic and Cloves into a blender/food processor and grind them into a Paste
  2. Mix the Eggplant strips with 1/4 tsp Turmeric.
  3. Heat enough Oil and fry the Eggplants until they are brown for about 6 to 8 minutes on medium to high heat.
  4. Put the Eggplants aside and discard some of the Oil, so only 1 to 2 tbsp are left.
  5. Fry Curry Leaves and Mustard Seeds for 3 Minutes on low heat.
  6. Add the sliced Onion and fry 1 more minute.
  7. Add the Paste, Coriander, Salt and Sugar, mix well and fry for 2 minutes.
  8. Add Eggplant and Vinegar, mix and fry 1 more minute.
