Thai Recipe: Vegetables in Coconut Milk

Pad Pak Ga Ti are Vegetables in a Hot and Sweet Coconut Sauce. You can choose different Vegetables an it works great with leftovers. This Recipe is so fast and easy and fits perfect to some rice

  • 200g Napa Cabbage
  • 50g small thai Eggplants
  • 100g green Beans cut
  • 150g Winter Melon diced
  • 100g Mushrooms
  • 250ml Coconut Milk
  • 1 Shallot chopped
  • 2-3 thai Chili chopped
  • 1 tsp (Palm) Sugar
  • 1 tbsp Soy Sauce
  • 2-3 Kaffir Lime Leaves
  • Instruction

    1. Heat the Coconut Milk with Shallots, Sugar and Soy Sauce and bring to boil
    2. Add Lime Leaves, Chili and all the Vegetables except the Mushrooms and let it simmer for 3 minutes
    3. Add the Mushrooms and simmer for 3 more minutes
