Burmese Recipe: Aloo Hin

A very simple but delicious Burmese Potato Curry. Can be eaten with Rice or as a side dish.

Ingredients

  • 500g Potatoes peeled and cut
  • 1 Onion chopped
  • 1 tbsp Ginger chopped
  • 3 Cloves Garlic chopped
  • 1/2 tsp Turmeric
  • 1/2 tsp Chili Powder
  • 2 tsp yellow Curry Powder
  • 2 tbsp Seasoning/Soy Sauce
  • 1 cup Water

Instruction

  1. Put Onions, Garlic and Ginger into a blender and grind into a Paste
  2. Heat 3-4 tbsp Oil on a low flame and fry the Onion-Paste, Turmeric and Chili Powder for 4 minutes.
  3. Add Potatoes, 1 cup Water and Seasoning/Soy Sauce, mix well and bing to boil
  4. Let it simmer covered for about 20 minutes until the Potatoes are tender
  5. At last add the Curry Powder and mix well
