Chinese Recipe: Eggplant Rice
Just a simple Chinese Rice Recipe with fried Eggplant. The five spice powder and the sauces give the rice a nice and aromatic taste. Its made very quickly and works great with other dishes.

Ingredients
- 1 cup Rice freshly cooked (results in about 3 cups)
- 2 cups Asian Eggplant diced
- 1 tbsp Ginger chopped
- 2-3 Cloves Garlic chopped
- 1-2 red Chili chopped
- 1-2 tbsp Scallions (white part)
- 2 tbsp Scallions (green part)
- 3 tbsp Coriander chopped
- 1 tsp Cumin Seeds
- 1/2 tsp Chinese Five-Spice Powder
- 2 tbsp Chili Sauce
- 1 tbsp white Vinegar
- 2 tbsp Soy Sauce
- 1/2 cup Broth
- 2 tbsp Oil
Instruction
- Heat 2 tbsp Oil and fry the Cumin Seeds for 1 minute on medium heat
- Add Garlic, Ginger, Chili and white parts of the Scallions and fry for 1 more minute.
- Add the Eggplants and stir-fry for about 2 minutes
- Add 1/2 cup Broth and let it cook for about 4-5 minutes until the Eggplants are tender
- Add Chili Sauce, Five-Spice Powder, Vinegar and Soy Sauce and mix well
- Add the Rice and mix again
- Add Coriander and green parts of the Scallions, mix well and turn off the heat
