Indian Recipe: Gobi Matar

This is a flavorful Indian Recipe with Cauliflower and Peas. A very delicious vegetable dish. Can be served with roti or rice.

Ingredients

  • 1 Cauliflower cut into florets
  • 1 Tomato chopped
  • 1 cup green Peas (frozen)
  • 2 Chili chopped
  • 1 tbsp Ginger
  • 1 Onion chopped
  • 3 Cloves Garlic
  • 1 Bay Leave
  • 2 Cloves
  • 1 Star Anise
  • 1 small Cinnamon Stick
  • 1/2 tsp Caraway Seeds
  • 1/4 tsp Turmeric
  • 1/4 tsp Chili Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Garam Masala
  • 3 tbsp Oil
  • 1/2 tsp Salt or to taste

Instruction

  1. Heat 3 tbsp Oil on low heat and fry the Bay Leave, Cloves, Star Anis, Cinnamon and Caraway Seeds for 3 minutes
  2. Add Onions, Ginger and Chili and fry for 2-3 minutes
  3. Add Garlic and fry 1-2 more minutes
  4. Add the Tomato, Chili Powder, Turmeric and Coriander, mix well and fry for about 4 more minutes
  5. Add a bit of Water, Cauliflower, Peas and Salt, mix well and let it simmer covered for 10-15. Check a few times and add a bit more water if necessary.
  6. Add Garam Masala and let it simmer without a cover until most of the Liquid is vaporized.
