Indian Recipe: Korma

A very easy Recipe for a Indian mixed Vegetable Korma. Cauliflower, Carrots, Peas and Potatoes in a creamy Cashew Curry Sauce.

Ingredients

  • 2-3 cups Vegetables:
    -1 cup Cauliflower
    -1 cup Peas
    -1/2 cup Carrots diced
  • 1 cup Potatoes diced
  • 1 tsp Cumin
  • 1/2 tsp Chili
  • 1/2 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 3/4 tsp Salt
  • 3 tbsp Oil

For the Paste:

  • 1 Tomato chopped
  • 10 Cashew Nuts (soaked for 20 minutes)
  • 2 Cloves
  • 1 tsp Ginger chopped
  • 4 Cloves Garlic chopped
  • 1 Onion chopped
  • 1/4 cup Water

Instruction

  1. Put 1/4 cup Water, Tomato, Cashews, Cloves, Ginger, Garlic and Onions into a Blender and grind them into a Paste
  2. Heat 3 tbsp Oil and fry the Cumin Seeds for 3 minutes on low heat.
  3. Add Chili, Turmeric and Coriander and fry for 10 seconds.
  4. Add the Paste, mix well and fry for 6-7 minutes.
  5. Add Vegetables, Potatoes, 1 cup Water and Salt, mix well and bring to boil.
  6. Let it simmer covered for 15-20 minutes
    until the Potatoes are tender.
