Indian Recipe: Bhindi Aloo Subzi
This is a very easy Indian subzi with fried Okra and Potatoes. Nice and Spicy. Can be eaten with some Roti or Paratha

Ingredients
- 1 1/2 cups Okra sliced
- 1 cup Potatoes diced
- 1 Onion chopped
- 2 Cloves Garlic chopped
- 1 tsp Cumin Seeds
- 1 tsp Amchoor (Mango Powder)
- 1/4 tsp Turmeric
- 3/4 tsp Chili Powder
- 1 tsp Coriander Powder
- 1/2 tsp Salt
- 2 tbsp Oil
Instruction
- Heat 2 tbsp Oil and fry the Cumin Seeds for about 3 minutes on low heat.
- Add Onions and fry for another 3 minutes.
- Add Garlic and fry for 1 to 2 minutes.
- Add Potatoes, mix well and fry for about 6 minutes on a medium flame.
- Add Okra, mix well and fry for about 5 minutes.
- Add Salt, Turmeric, Chili and Coriander powder, mix very well and fry for a few more minutes until the Potatoes are tender.
- At last add Amchoor, mix well and turn off the heat.
