Indian Recipe: Aloo Shimla Mirch
This is a very tasty stuffed Bell Pepper Recipe from India. The Peppers are filled with spicy mashed Potatoes and then slowly fried in a pan. Best eaten with a Chutney Dip and perhaps some Roti

Ingredients
- 4-5 Bell Pepper seeded
- 5-6 Potatoes boiled and peeled
- 1 Onion chopped
- 1 green Chili chopped
- 3 Cloves Garlic choppedc
- 1 tsp Cumin
- 1/4 tsp Turmeric
- 1/4 tsp Chili Powder
- 1/2 tsp Garam Masala
- Salt to taste
- 1/2 tsp Amchur (Mango Powder)
- 1 handful Coriander chopped
- 2 + 2 tbsp Oil
Instruction
- Mash the Potatoes and set aside
- Heat 2 tbsp Oil on a low flame and fry the Cumin Seeds for 3 minutes
- Add the Onion and fry for 2 minutes
- Add Garlic and green Chili and fry 1 more minute
- Add Chili and Turmeric Powder and fry again 1 minute
- Add mashed Potatoes, mix well and frz for 2 minutes
- Add Garam Masala, Amchoor, Coriander and Salt, mix well and turn off the heat
- Stuff the Bell Peppers with the Potato Mixture
- Heat 2 tbsp Oil on a low flame again and fry the stuffed Bell Peppers for a total of 20 to 25 minutes. Turn the Peppers a few times, so everz side gets slightly brown. At last also put it on the top with the Potato filling to the pan.
