Indonesian Recipe: Acar Kuning
Acar Kuning are pickled Vegetables from Indonesia and are so quick and easy to make. Mixed Vegetables are simmered in a sweet and sour Sauce. Its a perfect and healthy side dish.

Ingredients
- 3 cups Cucumber julienned
- 2 cups Carrots julienned
- 1 cup green Beans cut
- 2 large red Chili julienned (substitute with bell pepper)
- 1-2 tbsp Ginger-Garlic Paste
- 1 tbsp Lemongrass chopped
- 4 Shallots quartered
- 1/2 tsp Turmeric Powder
- 1 tbsp (Palm) Sugar
- 3 tbsp white Rice Vinegar
- 3 tbsp Water
- 2 tbsp Oil
- salt to taste
Instruction
- Heat 2 tbsp Oil and fry Ginger-Garlic Paste, Turmeric and Lemongrass for about 1-2 minutes on medium heat.
- Add Sugar, 3 tbsp Vinegar and 3 tbsp Water, mix and let it simmer until the sugar is dissolved
- Add Shallots and Beans and simmer for 3 more minutes
- At last add Chili, Carrots and Cucumber, mix and simmer 4-5 minutes.
