Italian Recipe: Aglio e Olio

A very simple Italian Pasta Recipe. Spaghetti with Olive Oil and Garlic. Simple but delicious.

  • 5-6 Cloves Garlic thinly sliced
  • 4-5 tbsp Parsley chopped
  • 250g Spaghetti (+1/2 cup Pasta Water)
  • 1/2 tsp Chili Flakes
  • 1/2 tsp Pepper
  • Salt
  • 6 tbsp Olive Oil


  1. Boil the Spaghetti in salted Water until they are al dente.
    Keep 1/2 cup of the Pasta Water and put aside.
  2. Heat the Olive Oil and fry the Garlic for 5 minutes on a low heat. The Garlic should only brown slightly.
  3. Add Pepper, Chili, Salt (if necessary) and 1/2 cup Pasta Water, mix well and let it simmer for 5 minutes. (The amount of Salt depends on how salty the Pasta Water is)
  4. Add the Spaghetti and mix very well.
  5. Add the Parsley and mix again.
