Sri Lankan Recipe: Wambatu Moju
Wambatu Moju is a Sri Lankan fried Egggplant Pickle. Very delicious and best served with rice or as a side dish for a curry.

Ingredients
- 2 cups Eggplant cut into strips
- 1 small Tomato chopped
- 1 tbsp Ginger chopped
- 3 Cloves Garlic chopped
- 2 Cloves
- 1/4 tsp Turmeric
- 1 tsp Coriander Powder
- 3 red Onion sliced
- 1/2 tsp Mustard Seeds (black)
- 1 handful Curry Leaves
- 2 tbsp Rice Vinegar
- 1/2 tsp Sugar
- 1/2 tsp Salt
- Oil
Instruction
- Put the Tomato, Ginger, Garlic and Cloves into a blender/food processor and grind them into a Paste
- Mix the Eggplant strips with 1/4 tsp Turmeric.
- Heat enough Oil and fry the Eggplants until they are brown for about 6 to 8 minutes on medium to high heat.
- Put the Eggplants aside and discard some of the Oil, so only 1 to 2 tbsp are left.
- Fry Curry Leaves and Mustard Seeds for 3 Minutes on low heat.
- Add the sliced Onion and fry 1 more minute.
- Add the Paste, Coriander, Salt and Sugar, mix well and fry for 2 minutes.
- Add Eggplant and Vinegar, mix and fry 1 more minute.
