Thai Recipe: Rat Na
An easy and fast Thai Recipe. Thin Rice Vermicelli are fried in a bit of oil and then served with stir-fried Broccoli, Carrots and Shiitake Mushrooms in a sweet and salty sauce. Really delicious and a perfect meal.

Ingredients
- 150-200g thin Rice Vermicelli (prepared)
- 1 tsp dark Soy Sauce
- 1 cup Broccoli Florets
- 1/2 cup Carrots cut
- 5-6 Shiitake Mushroom dried (soaked in warm water for 30 minutes)
- 2 tsp (Tapioca) Starch + 3 tbsp Water
- 1 tbsp yellow Soybean Paste
- 1 tbsp Soy Sauce
- 1/2 tsp Pepper
- 1 tsp Sugar
- 2-3 tbsp Oil
- 1 cup Water
Instruction
- Mix 1 tsp dark Soy Sauce with the Rice Vermicelli until they are evenly brown
- Remove the stalks of the soaked Mushrooms and cut into strips
- Heat 1 tbsp Oil and stir-fry the Noodles for about 2 minutes on medium heat
- Heat 1-2 tbsp Oil and fry the Mushrooms for 1-2 minutes on medium to high heat
- Add Broccoli and Carrots and stir-fry for about 1 minute
- Add 1 cup Water, Pepper, Sugar, Soybean Paste and Soy Sauce and turn down the heat
- Add the mixture of 2 tsp Starch and 3 tbsp Water, mix well and let it simmer until the sauce thickens
