Thai Recipe: Massaman Curry Paste
Recipe for a Massaman Curry Paste. For a more authentic and better taste use a mortar and Pestle but a Blender works also and is much less work.

Ingredients
- 15-20 dried red Chili (seeded and soaked for 15 minutes)
- 2 tbsp Coriander Seed
- 6 Cardamom
- 6 Cloves
- 1 tbsp Cumin Seeds
- 5 cloves Garlic chopped
- 2 Shallots chopped
- 2 tbsp Coriander Stems/Roots chopped
- 2 tbsp Lemongrass chopped
- 1 1/2 tbsp Galangal chopped
- 1 tbsp Kaffir Lime Leaves chopped
- 1 tsp Cinnamon
- 1 tsp Nutmeg
- 1 tsp Pepper
- 1 tsp Salt
Instruction
- Heat a Pan and dry roast Coriander Seeds, Cumin, Cardamom and Cloves on medium heat for about 5 minutes.
- Put all the Ingredients except the powders into a blender and grind into a paste. If necessary add a tiny bit of water. You can also use mortar and pestle
- Add Salt, Nutmeg, Cinnamon and Pepper to the Paste and mix well.
- Store in a sealed Container
