Thai Recipe: Massaman Curry Paste

Recipe for a Massaman Curry Paste. For a more authentic and better taste use a mortar and Pestle but a Blender works also and is much less work.

  • 15-20 dried red Chili (seeded and soaked for 15 minutes)
  • 2 tbsp Coriander Seed
  • 6 Cardamom
  • 6 Cloves
  • 1 tbsp Cumin Seeds
  • 5 cloves Garlic chopped
  • 2 Shallots chopped
  • 2 tbsp Coriander Stems/Roots chopped
  • 2 tbsp Lemongrass chopped
  • 1 1/2 tbsp Galangal chopped
  • 1 tbsp Kaffir Lime Leaves chopped
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg
  • 1 tsp Pepper
  • 1 tsp Salt


  1. Heat a Pan and dry roast Coriander Seeds, Cumin, Cardamom and Cloves on medium heat for about 5 minutes.
  2. Put all the Ingredients except the powders into a blender and grind into a paste. If necessary add a tiny bit of water. You can also use mortar and pestle
  3. Add Salt, Nutmeg, Cinnamon and Pepper to the Paste and mix well.
  4. Store in a sealed Container
