Vietnamese Recipe: Pho

Pho is a Vietnamese National Dish. A wonderful and aromatic Noodle Soup. Served with Herbs, Beansprouts and Tofu. The Soup is very healthy and tastes incredible.

Ingredients

    Soup:

  • 2 Star Anise
  • 3 Cloves
  • 2 Cardamom
  • 1 Cinnamon Stick
  • 1 tbsp Ginger sliced
  • 2 Shallots halved
  • 4 Cloves Garlic halved
  • 1 Onion quartered
  • 2 tbsp Soy Sauce
  • 2 L Stock (Mushroom)
  • Remaining Ingredients:

  • 400g Rice Noodles Prepared
  • 2 cups Beansprouts
  • 150g Fried Tofu cut
  • 100g Straw Mushroom
  • 1 cup Coriander / different Herbs
  • 3-4 tbsp green Onions chopped

Instruction

  1. Heat a pan and dry roast Star Anise, Cloves Cardamom, Ginger, Shallots, Garlic, Cinnamon and Onion on low heat for about 7-8 minutes
  2. Bring 2 L Stock with all the roasted spices to boil and let it simmer for 25 minutes.
  3. Discard the Solids
  4. Add Mushrooms and Soy Sauce and simmer 5 more minutes
  5. Put some Noodles in a bowl, add the Soup and serve with the remaining Ingredients
