Thai Recipe: Yellow Curry

All the Thai Curries are very famous and known for their incredible taste and spiciness but the yellow Curry is my favorite. This delicious yellow Curry Recipe comes with Pumpkin, Potatoes and red Bell Pepper and is best served with Jasmine Rice.

Ingredients

  • 2 cups Potatoes diced
  • 1 cup Kabocha Pumpkin diced
  • 1 red Bell Pepper cut
  • 1 Onion cut
  • 2-3 tbsp yellow Curry Paste
  • 2 tbsp Curry Powder
  • 1 tbsp Sugar
  • 250 ml Coconut Milk
  • 250 ml Coconut Cream
  • 3 tbsp Soy Sauce
  • 2 tbsp Oil

Instruction

  1. Heat 2 tbsp of Oil on low-medium flame and fry the Curry Paste for about 4 minutes
  2. Add half of the Cococnut Cream, mix well and simmer for 3 minutes
  3. Add Coconut Milk, Pumpkin and Potatoes and let it simmer for 10-12 minutes until the Potatoes are tender
  4. Add Onions, Bell Pepper, Sugar, Soy Sauce and Curry Powder, mix well and simmer for 3-4 more minutes
  5. At last add the remaining Coconut Cream
